麻辣水煮鱼
原料:
草鱼1000克,青笋类300克,精炼油150克,干辣椒节250克,花椒10克,老 姜15克,大蒜10克,小葱10克,郫县豆瓣50克,料酒25克,胡椒粉3克,精盐2克,白糖2克,酱油2克,味精2克,水淀粉15克,鲜汤100克,醪糟汁10克
制法:
1、草鱼宰杀治净,取下净鱼肉,斜刀片成厚约0.2厘米的片,然后放入碗中,加盐、料酒、水淀粉和匀;鱼头及鱼骨斩成块;老姜、大蒜去皮洗净,切成姜蒜末;青笋类洗净,切成片;小葱洗净,切成葱花。
2、锅置旺火上,烧精炼油至4成熟,放入干辣椒节、花椒、郫县豆瓣炒香上色,投入姜米、蒜米稍炒,掺入鲜汤,加盐、料酒、胡椒粉、白糖、酱油、醪糟汁、鱼头、鱼骨熬出味至熟。
3、另锅置旺火上,烧精炼油少许,投入青笋尖加盐炒断生,盛入碗中待用。
4、将熬出味的鱼头及骨捞出倒在青笋尖上,锅内汤汁烧沸,放入鱼片滑散氽熟,烹入味精和均匀,起锅盛入碗中,撒上葱花。
5、锅内烧精炼油至5成熟,放入干辣椒、花椒、姜蒜米炒香,淋在葱花上即成。
特点: 肉质细嫩,麻辣不燥,鲜香醇厚,回味无穷
