本试验以内蒙古产白花甜荞麦为原料,参照一般植物蛋白碱萃取酸沉析的提取制备方法,开发并优化出荞麦蛋白的制备工艺;然后动态地研究了荞麦蛋白的几种重要的功能特性,它们是溶解性、乳化性和起泡性,观察并分析这些功能性质在几种主要的环境条件下的行为。
