制法:
(1)“扒素鸡”:豆腐皮10张,在清水锅内煮几滚后,取出用新抹布包压起来,约10--15分钟揭掉抹布,用刀片成5厘米长、1.5厘米宽、1.5厘米厚的块,摆放碗内。
(2)上放花椒1个、葱花1.5克、糯米1.5克、盐1.5克,添半勺黄芽汤,入笼蒸15分钟端出,再兑点开水和胡椒面即成。
