Based on the molecular structures, sugar alcohols can be classified into Mono sugar alcohol (such as erythritol, xylitol, sorbitol and mannitol) and Disaccharide alcohol (such as maltitol,lactitol and isomaltitol).
糖醇(sugar alcohol)是醛糖或酮糖的羰基(—CHO、＞C=O)经氢化还原成羟基(-OH)的多元醇(polyols)；按其结构可分为单糖醇(如四元赤藓糖醇、五元木糖醇、六元山梨糖醇和甘露糖醇)，双糖醇(如麦芽糖醇、乳糖醇、异麦芽酮糖醇)。

| 赤藓糖 erythrose 一种单糖。分子式HOCH2（CHOH）2CHO。  含有两个相邻的手性碳原子（见手征性）。自然界尚未发现游离的赤藓糖，D-赤藓糖-4-磷酸酯是碳水化合物酶促转化的中间体。D-赤藓糖为糖浆状液体，有变旋现象；比旋光度 ＋1°→－14.5°(3天，水，C＝11 )。L-赤藓糖也为糖浆状液体，有甜味， ＋11.5°→＋ 30.5°（长期平衡，水，C＝3)。D-或L-赤藓糖均不为酵母所发酵。D-赤藓糖一般由D-阿拉伯糖酸钙经氧化制得；L-赤藓糖可由L-阿拉伯糖酸钙氧化制得。含有两个相邻的手性碳原子的有机化合物，如相当于赤藓糖的手性碳原子的构型，则称该化合物为赤构型。 |
