基本材料
猪瘦肉150克，葱末、姜末、精盐、味精、料酒、湿淀粉各少许，鸡蛋5个，香油10克，猪肉皮1小块，花生油250克。
制法
将猪肉切成小丁，加入葱姜末、味精、精盐、料酒、香油各1个鸡蛋的蛋液，用筷子搅匀成馅，分为12份。将4个鸡蛋磕入碗内，加入少许精盐和湿淀粉拌匀。将手勺在火上烧热后，用猪肉皮擦一下，滴入蛋浆少许，旋转手勺，摊成小圆蛋皮12张。在每张蛋皮上放肉馅，合拢粘成饺子形，放入盘内。花生油入锅烧至五成热，放入制好的蛋饺，炸至外酥里嫩即成。
功效
补益强壮，健脑增智。
用法
佐餐食用，每周2--3次。
应用
适用于脑力劳动者及记忆力减退者。
