油辣豆腐块
原料: 原 料：
豆腐500克，葱2克，姜5克，醋2克，酱油5克，白糖5克，精盐5克，桂皮2克，花椒2克，大料2克，辣椒粉5克，茴香2克，麻油10克，豆油500克（耗约75克）。
制法: （1）将豆腐洗净，切成1.5厘米见方的小块。把花椒、大料、桂皮、茴香装在纱布袋内。葱切段，姜拍碎。
（2）炒锅置火上，加入豆油，烧至八成热，分批投入切好的豆腐块，用旺火炸至表面金黄捞出。
（3）锅内放入清水，投入料袋，加精盐、酱油、白糖、醋、辣椒粉、葱段、姜，烧开后放入炸好的豆腐块，用小火焖约15分钟，待汤汁将尽时，取出料袋，拣出葱、姜，淋入麻油，炒匀后，起锅装入盘内，晾凉即成。
特点: 色泽金黄，咸甜香辣，味美适口。
