绿豆粉具有清热解暑功能,在气候比较炎热的铜仁地区颇受群众喜爱。绿豆粉的原料是绿豆、糯米、大米,三者的比例为3 :3 :4。其制作过程分磨浆、烙炕两个步骤。磨浆具体操作如下:先将绿豆浸泡去皮,糯米和大米浸泡10—12小时,再将这几种原料混合磨成浆汁,用文火将锅烧烫后,再用刷把蘸油抹在锅周围,舀一勺浆汁均匀地摊在锅面上烙炕成锅盖形的豆皮,揭下后在竹竿上稍加冷却,折叠成扁筒状,切成筷子宽的条。食用时,将新鲜的绿豆粉下在沸水里煮半分钟左右捞在碗里,加上佐料即可。绿豆粉的佐料也很讲究,有姜粒、葱花、花椒油、豆酱、油辣椒、猪油等,吃起来鲜辣醇香,绵软溜滑,清爽可口。如有条件,可将花椒油换成木椒油,猪油换成松菌油,吃起来清香更甚。炎热天吃一碗绿豆粉会使人感到浑身清爽,暑气顿消。
