原料: 原 料：
西洋芹500克，大方豆腐干3块(重约75克) 酱油30克，麻油50克，味精3克。
制法: （1）将西洋芹菜择去老叶留茎，放旺火沸水锅中烫至刚熟，捞出沥干，切成5厘米长的细丝，放在盘内。
（2）将大方豆腐干每块切20片左右，再切成比火柴棒还细的丝，用沸水浸烫3次，挤去水分，放在盛有芹菜的盘中，浇上酱油、麻油、撒上味精，拌匀即成。
特点: 色泽淡雅，质脆爽口，绵软入味。
