菊花天麻脑
主料
猪脑2副，猪脊肉末50克，天麻9克，菊花3克。
配料
味精3克，盐少许，麻油数滴。
做法
1．猪脑先挑去红筋膜，用清水浸洗去其血秽后，装入炖盅。
2．天麻切片，用文火稍炒，待凉后放入炖盅内的一边，猪脊肉末放入炖盅内的另一边。
3．用另一加入适量水的小锅，将菊花滚至菊汁流出。弃药渣不用，将滤出的菊汁趁热倒入炖盅，用文火约炖1小时即成。
4．食用时除去天麻，调入味精、盐，滴入麻油。
特点
菊香透心。
药用价值
天麻味甘性平，多用以平肝潜阳、息风止痉、通经活络；菊花则味辛、苦、甘，性微寒，多用来疏风散热、平肝明目、解毒散肿、降血压。此二药与猪脊肉末及味甘、性寒的猪脑合炖，可治疗头风眩晕、偏头痛、高血压、中风、小儿急惊风等疾病，助人入睡。
