原料:

水发裙边150克。 鸡翅膀100克、猪肋骨50克、猪肥瘦肉片50克。精盐3克,味精2克、葱姜12克、奶油25克。绍酒20克、姜汁15克、猪油35克、湿淀粉15克。

做法:

将水发裙边投入开水锅内,除去异味,用清水洗净,再用清水氽过,凉后切成长6厘米、宽2厘米的长方块备用。炒锅内放入熟猪油用中火烧热,放葱姜丝,煸出香味后,将鸡翅、猪肉片、猪肋骨放入锅内中略煸炒一下,随即加入奶汤、绍酒、精盐,捞出葱姜,开沸后,打去浮沫,将肋骨捞出排在砂锅底,上面放裙边,再将砂锅内的鸡翅随汤一并倒入砂锅内,用微火扒至裙边糯烂时,捞出裙边码入碗中,扣入汤盆内。锅内放入奶油、绍酒、精盐、姜汁及原汤,待沸后撇去浮沫,用湿淀粉勾芡。加入味精、淋葱油,浇在裙边上即成

特色:

裙边透明糯烂,汁浓洁白似胶,香气四溢,并有滋阴凉血之功效。
