制作方法
1.选料：挑选长度11厘米以下、直径3.5厘米以下的乳嫩小黄瓜，剔除伤烂、虫害等不合格瓜。在流动冷水中浸泡4～6小时。
2.刷洗：将黄瓜上泥沙等刷洗干净。长度11厘米以上的瓜须削蒂，但不得露籽。
3.热烫：85～90℃水中热烫1～2分钟。
4.小配料处理：胡椒、月桂叶、红辣椒、芥籽、茴香籽等剔除杂质，清水洗净备用。洋葱去皮切成条状。
5.香料水配制：取洋葱3.6千克、红辣椒0.2千克、莳萝籽0.4千克，混合后加水约20千克，煮沸30分钟，过滤调整至总量20千克备用。
6.分选：(1)按大小色泽分开装罐。(2)畸形、修削不良的瓜剔除。
7.汤汁制备：精盐5千克、砂糖5.5千克、香料水20千克、冰醋酸1.9千克、沸水约90千克。糖、盐先以沸水溶解过滤，再加入香料入、冰醋酸，过滤调至总重量为120千克。
8.装罐：罐号：9116，净重750克，黄瓜450克，胡椒2粒、月桂叶半片、芥籽7克、洋葱13克、汤汁280克(汁温90℃以上)。
9.排气及密封：抽气密封300～400毫米汞柱。
10.杀菌及冷却：杀菌式(抽气)：7′～12′/100℃(水)快速冷却。
