		| 清宫菜 中国清代皇宫内由御膳房制作的专供皇帝、后妃们食用的菜肴。以满族食风为主,包括江南、山东和四川风味。制作精致,色形美观,擅长熘、炒、蒸、炸,以清、鲜、酥、嫩著称。如今,在北京北海公园内的仿膳饭庄和颐和园内的听鹂馆餐厅,可以品尝到仿制的清宫菜。清宫菜得以流传下来,首先得力于原清宫御膳房中的几位老御厨:孙绍然、王玉山、赵永寿、牛文质、温宝田等。清亡后,他们于1925年在北海公园内开设了仿膳斋(即仿膳饭庄的前身),专门经营清宫风味,立刻名扬北京城。 清宫菜的特点是:①选料考究。所用米、面、肉、蔬、瓜果、禽鱼、山珍海味,多为各地精选的贡品。②名厨精心烹制。分工细,制作精。许多御厨终其一生只负责一种或数种菜点的制作。③配料严格,不得任意搭配。④讲究原汁本味。⑤菜名朴素直观。 |
