配料： 腌料：盐、糖各1/3茶匙，酒1/2汤匙，姜1片，葱1条，生粉1/2茶匙，油2汤匙，水3汤匙。芡料：蚝油1汤匙，麻油、胡椒粉各少许，糖1/3茶匙，上汤2/3杯，老抽1/2茶匙，生粉4/3茶匙。调味料：盐、糖各1/3茶匙，姜汁、酒各1茶匙，水1杯。
做法： 1、冬菇用清水浸软，挤干水去蒂，加腌料拌匀蒸20分钟，去姜、葱。
2、芥兰洗净，切长菜心。
3、下油2汤匙，放下芥兰炒软，加调味料煮熟，盛在碟上，去汁。
4、下油1汤匙，下芡料煮滚，再下冬菇、甘笋煮滚，放在芥兰上。
