原料：
黄花鱼一条鱼约600克，肉片100克，湿冬菇50克，笋花75克，葱5克，姜10克，绍酒10克，味精5克，酱油10克，白糖3.5克，精盐5克，花生油100克。
做法：
1、将黄花鱼刮鳞、去腮及内脏后洗净，葱切段，姜切丝待用。
2、烧热鼎，放入花生油，再放入黄花鱼，煎至半熟后取出。在鼎中投入肉片、冬菇、笋花、姜丝，略炒，放入黄花鱼，溅入绍酒，放入上汤、酱油、味精、白糖、精盐、姜上鼎盖，用文火加热10分钟后将鱼装上盘，把鼎中汤汁烧浓后放下葱段，然后把汤汁淋到鱼上即成。
