原料：
鳗鱼300克，红辣椒、青葱段、蒜末各少许
辅料：
(1) 料酒半大匙、淀粉1茶匙、盐1茶匙、胡椒粉少许
(2) 豆瓣酱半大匙、米酒1茶匙、糖1茶匙、胡椒粉少许、水淀粉半大匙
做法：
①鳗鱼去骨，洗净切段，加入调味料(1)拌匀备用；红辣椒洗净切小段，备用。
②将调味过的鳗鱼球过油至熟起过。
③锅内加入少许油爆香红辣椒段、青葱段与蒜末，再放入除水淀粉以外的调味料(2)(淀粉勾芡用)、鳗鱼球炒匀入味，水淀粉勾芡，收干水分即可。
tips：
①鳗鱼去骨可请鱼贩代劳，一般家庭自己处理较麻烦。
②鳗鱼有黏液，清洗时可在水中加少许醋。
