蔗糖 sucrose 一种二糖。分子式C12H22O11。系统名a-D-葡萄吡喃苷基-β-D-果呋喃糖苷。为最普通的食用糖。大量来自甘蔗和甜菜,甘蔗含蔗糖约15%~20%,甜菜含10%~17%,其他各种果实、种子、叶、花、根中也含一定量的蔗糖。全世界蔗糖年产量超过1000万吨。 蔗糖为白色晶体。熔点185~186℃,密度 1.5805克/厘米3(17.5℃比旋光度 ![]() 将甘蔗或甜菜榨出汁液,加入石灰乳沉淀除去其中的蛋白质、胶质、有机酸等杂质,过滤后真空浓缩结晶,在分离机上分离得粗糖(即市售红糖)。粗糖再溶于水,经水蒸气蒸馏脱味和活性碳脱色,再浓缩结晶即得白糖。蔗糖可被细菌发酵,在高浓度时能抑制细菌生长,医药上可用作防腐剂和抗氧剂。
