材料
鸡糁300克，蛋黄粉20克，番茄一只，绿菜叶50克。
调料
精盐2.5克，味精0.5克，胡椒粉0.5克，清汤约1000克。
做法
①将番茄用开水烫一下，去皮、籽、蒂，切成片。绿菜叶洗净，用开水烫一下然后漂凉。
②器皿加清水1500克，取一半鸡糁保持本色，挤成直径2厘米长的丸子，用高火将丸子煮熟。另一半鸡糁中加入蛋黄粉搅匀，也用高火煮熟。
③器皿内掺清汤，加精盐、胡椒粉，高火6分钟，烧开待用；番茄、绿菜叶放入另一沸器皿内，烫熟捞入碗内垫底，把鸡丸盛在上面，汤内加入味精，然后舀在鸡丸碗内即可。
