[原料]猪肋排500克。
[[[调料]]]盐1克，味精1克，胡椒粉0.1克，玫瑰乳腐1块，乳腐卤25克，大蒜粉10克，鸡蛋半只，黄酒2克，生粉3克，麻油3克，糖50克，柠檬汁10克，清油10克(实耗)。
[操作程序]
1．糖油制作：糖用水熬到黏稠时加入柠檬汁及少量盐，冷却后成糖油。
2．肋排洗净斩成5厘米长的段，漂净血水捞出，加味精、酒、胡椒粉、盐腌渍半小时，随后加进捏碎的乳腐及乳腐卤、大蒜粉、鸡蛋、生粉，拌匀，加入清油、麻油稍拌一下，待炸。
3．油锅烧到四成热(约150℃)，放入肋排慢慢炸熟，捞出，待油温再升高时复炸后捞出，并在表面浇些糖油，即可装盘。
[特色点评]色泽光亮鲜红，肉香、味鲜。此菜也是一道新菜，新在做法和口味上。
[要领提示]初炸时油温不宜过高，否则色泽暗，并会失去乳腐的鲜红色。
