| 普通小麦(cmmon wheat) 是小麦属的六倍体种之一，学名Triticum aestivum L.或T.vulgare Host，又称软粒小麦(soft wheat)或面包小麦(bread wheat)。染色体数2n=6x=42，染色体组型为AABBDD。种植面积约占小麦总面积的90%，是全世界最主要的粮食作物，可制面包、馒头、面条、糕点等多种食品。 普通小麦起源于西亚，分布于世界各地，在中国的栽培历史约4000年。各省(自治区)、市都有分布。类型丰富，共有321个变种。中国有变种120余个，主要有var.erythrospermum(长芒、颖无毛、白颖壳、红粒)，var.ferugineum(长芒、颖无毛、红颖壳、红粒)，var.lutescens(无芒、颖无毛、红颖壳、红粒)，var.graecum(长芒、颖无毛、白颖壳、白粒)等。 植株高度多在80-120cm之间，一般为100cm左右，茎秆多中空。植株叶片数大体上春性品种7-12片，冬性品种12-16片；春性品种较宽，冬性品种较狭。一般冬性品种分蘖较多，春性品种分蘖较少。穗轴不易折断，穗正面宽于侧面，有纺锤形、长方形、棍棒形、椭圆形及分枝型等类型。穗长5-15cm，穗密度D=15-30，小穗多花多实。芒有长芒、短芒、顶芒、无芒、曲芒等；颖色有红、白和黑，护颖的形状分圆、椭圆、卵圆、披针形等，颖嘴分钝、锐和鸟嘴等形状，颖肩，分无肩、斜肩、方肩、丘肩等，籽粒从深红、红、浅红、黄到白色分成一系列的颜色；地方品种千粒重20多克，改良品种一般30-40g，种子休眠期一般白皮品种较短，红皮品种则较长。 分秋播和春播两大类型。一般幼苗匍匐、颜色深绿的品种多属冬性，抗寒力较强；幼苗直立，颜色浅绿的品种，多属于春性，抗寒力弱； 中国春麦区生育期一般为100天左右，冬麦区一般为200-250天。东北春小麦生育期短的只有80-85天，华南冬小麦少者不超过120天，青藏高原地区的冬小麦，最长可达300天以上。秋播小麦自8月直到12月播种，次年3月初到6月下旬收获，春播小麦3月或4月间播种，7月至9月收获。对冬季寒冷和春霜的冻害有一定抵抗性，抗寒力强的冬性品种可耐-20℃左右的低温；随着矮化育种的发展，品种的耐肥性逐步提高，产量可以达7000kg/ha而不致倒伏，有的甚至每公顷产量可达1万kg以上。能抵抗黑穗病、锈病、白粉病、病毒病以及耐赤霉病。长江以南的品种籽粒质地以软质较多，黄河以北的品种以硬质、半硬质较多；蛋白质含量在10-16%之间。 |
