以胡萝卜、桔皮为原料制作的复合酱,是一种新颖酱品,外观呈金黄色,有桔子的清香,风味独特,口感细腻,营养全面,和肾理气,在一些地方上市后很受欢迎。
一、配方量。胡萝卜100、桔皮20、白砂糖20、淀粉0.5、柠檬酸0.2、食盐0.5、食用防腐剂适量。
二、操作。
1、胡萝卜浆制备。选用红心胡萝卜,洗净后放1/10000的高锰酸钾溶液中消毒。沥干,切成厚约0.5-1厘米的片状,搁置浸泡液内浸泡24小时。浸泡液按以下比例配制:20%活性硅酸溶胶0.5%、植酸0.5%、葡萄糖酸锌0.2%、乙醇1%,水97.8%,混合后搅拌均匀。
将浸泡过的胡萝卜片放进流水槽内冲洗干净,接着装入杀菌锅,控制温度在110-115℃区间蒸煮12-15分钟。冷却后经打浆机处理成浆状。
2、枯皮浆制备。将桔子放入0.1%盐酸溶液中浸泡15分钟,以去除残留农药。随后放入1/10000高锰酸钾溶液中消毒,取出冲洗,沥干,投进100℃沸水内烫漂几分钟,冷却后立即剥皮。
检查、剔除有腐烂、麻点、疤痕、褐变的桔皮,将好的桔皮放入0.1%多聚磷酸钠溶液中浸泡12小时,再进流水槽内漂洗干净,取出放入0.25%,碳酸氢钠沸液中热烫15-20分钟,接着送入打浆机,经打浆制得桔皮浆。
3、配制酱料。称取白砂糖按1∶1比例加入饮料生产用水,加热熔化,过滤,冷却得糖浆。按配方量添加各物料,搅拌均匀。
4、杀菌包装。酱料装瓶放入杀菌锅,控制蒸汽温度在105-110℃区间,时间20秒左右,高温杀菌后冷却得到成品。
