This paper used xiaoqu and monascus of pure species as saccharifying ferment for brewing light-type red qu yellow rice wine, and investigated the effect of husked millet on yellow rice wine flavor components and amino acid.

To study the feasibility of extracting active Polysaccharide of Cordyceps militaris in the rice medium and validate its regulation function at immune reaction of mice,we adopted direct cross experiment to optimize the extracting the technology of Polysaccharide and test the concentration of serum hemolysin by blood clotting method and the transformation of lymth cells in spleen by MTT method.

The growth curve, cultivation conditions for shake culture, plate culture and rice medium culture of RCEF0868, a strain of Hirsutella huangshanensis, anamorph of Cordyceps formosana, was studied in the present thesis.
