内蒙古传统名肴。以内蒙古特产猴头蘑为主料扒制而成。将泡发、清洗、整理好的猴头蘑放入烧沸的高汤锅中略蝉后捞出．沥尽水分，顺丝毛改成适度弹片．丝毛朝下整齐地码入盆中。锅内加适量熟猪油烧热，下入葱段、姜片稍炸，再加入适量鸡汤、料酒精盐、味素等烧沸，捞出葱段、姜片不用，撤去浮沫把盘中的猴头蘑推入锅中烧沸后，用小火煨熟，待汤汁略收浓，用水淀粉勾芡，淋入熟猪油，大翻勺后装入盘内，四周用制好的猴脸点缀即成。特点是色泽乳自．形状整齐．质地滑嫩，蘑香显著，回味悠长。适用于高档宴席中的主件。
