[原料/调料]
(1)大白菜 1颗
小黄瓜 10条
(2)柴鱼 2杯
蒜末 5大匙
姜末 3大匙
(3)葱 5支
(1)盐 1/3杯
(2)辣椒粉 3大匙
芝麻油 1大匙
糖 2大匙
[制作流程]
(1)将大白菜洗净后，将叶片一片片剥下，彻底沥干水份，用一半的盐均匀撒于叶片上并与葱一起腌约1天。
(2)将大白菜的盐水倒出并洗净备用，葱取出不用，小黄瓜全部洗净沥干后，用盐腌揉后冷藏静置约1天，再切对半备用。
(3)将每片大白菜叶放入半条小黄瓜，由硬叶茎处向叶尾捲起固定住，所有的大白菜叶及小黄瓜段都捲好备用。
(4)将材料(2)与调味料(2)搅拌均匀，淋撒于已捲好的大白菜卷上，冷藏腌渍2天使其入味，食用前取出切片即可，约可保存10天。
