这道菜选用的是鲮鱼的鱼皮,先把鱼皮灼熟。大厨介绍说,灼熟的过程是比较考工夫的。鱼皮刚熟就要捞起来,时间太长了则会变软,不够爽口了。把鱼皮配上芫荽、葱、白芝麻、炸花生,再加上小磨麻油等一起捞,吃进口里又香又脆。他还说,吃鲮鱼肉10月份是最好,不过这道菜用的材料是鱼皮,所以春季吃也很适合。
