材料:苹果3个,银耳20克,南杏、北杏各10克,蜜枣6个,鸭肾3个,猪月展肉450克、生姜2~3片。

烹制:苹果洗净,切为六片并去芯;银耳、北杏、南杏浸泡,洗净;蜜枣洗净、浸泡并去核;猪月展肉洗净,整块不必刀切;鸭肾切开去其脏杂,用食盐反复洗净,再用清水洗净。然后一起放进瓦煲内,加入清水3000毫升(约12碗水量),先用武火煲沸后,改为文火煲约两个半小时,调入适量食盐和少许生油便可。此量可供3~4人用,鸭肾等可捞起拌酱油佐餐用。秋日燥邪当令,阴津易亏,因而养阴益气、润肺生津的汤品是秋令养生的理想选择。苹果银耳鸭肾汤其功效正如此,汤中苹果生津除烦、开胃和脾;鸭肾有增强脾胃的功能,可帮助消化;银耳滋阴养胃、润肺生津;蜜枣益气生津、补脾润肺;南杏润肺、生津开胃;北杏祛痰止咳、润肠。合而为汤,更具滋阴益气、润肺生津的功效,为秋日男女老少皆宜的养生汤品。
