主料
河鳗750克,肥猪肉100克,湿冬菇50克,火腿50克,红辣椒1只,生姜10克,绍酒25克,酱油10克,味精5克,精盐5克,麻油2.5克,胡椒粉1克,上汤500克,湿生粉10克,北葱100克,花生油1公斤。
做法
1、河鳗宰杀去肠、去腮后洗净,飞水并洗去身上粘液,然后切段。肥猪肉、火腿、冬菇、北葱、红椒均切丁。
2、将河鳗放在碗里,加酱油、湿淀粉拌匀,投入6成热的油中炸至呈金黄色捞出。放入用二段竹筷和竹笪垫底的砂锅里。
3、将肥猪肉、冬菇、火腿、北葱、红椒略炒后,溅入绍酒,加上汤、酱油、味精、精盐,烧滚后倒入砂锅中,放入姜、葱,用猛火烧滚后改用文火加热炖1小时,然后排扣在碗内,撒上胡椒粉即可上桌。
特点
色泽金黄,鲜香嫩滑,味浓厚。
