					补充资料:雪菜滚黄花鱼汤
		闷闷的天气令人们的胃口受到一定的影响,佐餐汤品宜醒胃、可口,且营养丰富。雪菜滚黄花鱼汤便是其中之一。黄花鱼是鲜美惹味的海鲜鱼类,性平,味甘、咸,入胃、肾经,中医认为它有滋阴生精、润肺健脾之功;现代医学亦认为它有较丰富的营养价值,对滋养肝脾等脏腑有作用。而雪菜则性温,味甘、辛,能开胃消食、温中利气。
材料:雪菜40克、黄花鱼1~2条(约400克)、生姜3片。
烹制:雪菜洗净,浸泡片刻,挤干水,切碎;黄花鱼宰洗净,抹干水分,在鱼身上涂上食盐,内外腌10分钟。起油镬,煎至两面微黄,放姜片,溅入绍酒15毫升,加入清水1250毫升(约5碗水量),加盖,滚至汤呈乳白色,放入雪菜,稍后调入适量食盐便可。此量可供3~4人用。黄花鱼可捞起拌入酱油佐餐用。
