原料:干猴头菇2两,香菇1两,冬笋1两,黄瓜皮1两,清汤3两,湿淀粉2两,火腿2两。
做法:①将猴头菇在温水中浸15分钟,挤净水分切片。其他原料如香菇、冬笋等均切成片。②按相同层次摆成三排于碗中,另取一碗把料酒、酱油、清汤调匀,浇在排好猴头菇的碗内,上笼旺火蒸1小时,倒出汤汁(留用)翻扣在盘内。③将汤汁放入炒勺内,用中火烧沸再加入味精,将湿淀粉匀浇在盘内猴头菇上即成。此菜鲜嫩,味清香,因有红、黄、绿、白、黑、五色,形似云层。
