麻城肉糕
大别山南麓的麻城市,有名为“肉糕席”的10道菜中,头道就是肉糕。肉糕码在鲜花碗上,呈宝塔形。有红、黄、白、褐多色,不仅好看,而且味道鲜美。
制法:
(1)红苕(即红薯,也叫白薯)去皮洗净,切成4厘米长、1.6厘米宽的条。猪夹缝肉切丁剁泥盛钵,加硝水、葱花1克、荸荠丁、姜末一起拌匀。
(2)取鱼肉加清水45克拌匀,倒在用冷水抹过的砧板上。轻轻剁成细茸(越细越好)盛钵,加湿淀粉,精盐15克,清水250克,同搅匀,再放入肉泥,味精2克,胡椒粉1克,混合搅成糊。
(3)将油豆腐皮平铺笼屉内,把鱼肉糊平摊在上面(约3.3厘米厚),坐旺火沸水锅上蒸30-40分钟,揭开笼盖,将生鸡蛋黄抹在肉糕上面,撒上红辣椒末,再蒸5分钟取出,剞成十字花刀后,继续蒸30分钟,出笼晾冷,切成10厘米长、3.3厘米宽的条。
(4)取鲜花碗,用红苕条垫底,在上面用肉糕条码成宝塔形,上笼蒸热后出笼。
(5)炒锅坐旺火上,下肉汤、味精、精盐、胡椒粉、葱花、香菇丝、木耳片烧沸出锅,浇在肉糕上面,即可上席。
特点:鲜美滑软,五味俱全。
