婴儿每公斤体重每日需要脂肪约4g;6岁以上的儿童约需3g。脂肪所供的热量占每日总热量的35%(30%~50%)。哺食人乳时,摄取脂肪量很多,约合总热量的50%。饮食所供脂肪,需要新鲜并避免氧化,因氧化作用可使脂酸失去营养价值。乳类、蛋黄、猪油、肉类、奶油、肝类、鱼类、鱼肝油、植物油等,都是饮食供给脂肪的重要来源。脂肪类中,鱼肝油含有维生素A、D最多;花生油、豆油、奶油、棉花子油等含量较少;猪油、芝麻油、橄榄油等缺乏此两种维生素。人乳所含不饱和脂肪酸(花生四烯酸7%)较牛乳为多(3%),对儿童更为有利。
