| 黑麦 Secale cereale 禾本科黑麦属一年生或越年生草本。粮、饲兼用作物。原产地阿富汗、伊朗、土耳其一带。主要栽培区域在北欧，前苏联生产最多，其次为波兰、德国、捷克、斯洛伐克、加拿大和美国等。因适应性和抗逆性强，多分布在贫瘠地区的沙性土壤中。黑麦须根系发达，可深入土中120～180厘米。茎秆细长有韧性，叶较小麦短小。穗状花序，穗形细长，每穗有30～40个小穗，每小穗通常有两朵结实小花，结实率70％左右。子粒细长，顶端有毛，淡褐色或青灰色。有冬春性之分，冬黑麦产量高于春黑麦。对白粉病免疫，抗条锈和秆锈病的能力也较强，但抗叶锈病较差，且易感染赤霉病和麦角病。栽培管理与小麦相似。黑麦有自交不亲合性和自交退化现象。可用育性好的自交系配成综合品种；经人工诱变成同源四倍体黑麦；与普通小麦杂交，杂种经染色体加倍成八倍体小黑麦。子粒含蛋白质9％～11％，略低于小麦，但赖氨酸含量高于小麦。可食用、酿酒和作精饲料，茎秆可作饲料、造纸、编织工艺品和绿肥等。 |
