主料：桂鱼
辅料：木耳、葱姜丝、青红椒丝、香菜
调料：盐、酱油、醋、花椒、香油
烹制方法：
1、将桂鱼背部开刀，坐锅倒水加盐，水开后将鱼放入煮3分钟，关火加盖焖5分钟；
2、酱油、醋放入碗中拌匀，将鱼取出放在盘中，撒上葱姜丝、青红椒丝、木耳丝，将调好的汁浇在鱼的周围，热油，加少许香油，加花椒炸香，将花椒取出后浇在鱼身上即可。
特点：色彩鲜艳，鲜香嫩爽。
