盐水冻凤翼
主料： 鸡翼中段3/2斤（约600克），酒1汤匙，姜2片，葱2条，油1汤匙，番茄饰花1个，芫荽少许。
配料： 盐水料：粗盐3汤匙，八角1粒，花椒1茶匙（用白布袋盛上述材料并封口），水6杯。
做法： 1、鸡翼洗净，沥干水分，加入酒1汤匙拌匀，待用。
2、用砂锅烧热油1汤匙，爆香姜、葱，加入盐水料煮滚，放入鸡翼，候再滚，收慢火滚5分钟，不可开盖。待冷却后，取出鸡翼，放入冰箱内冷冻，随时取食。上桌时，可伴上番茄饰花和芫荽。
备注： 放入滚水中慢火浸煮，中途不要开盖，目的是使鸡翼充分吸收味汁而全熟。
