明胶属天然蛋白，由骨胶加水分解转变而成，具有复杂的分子结构，由各种氨基酸组成。工业明胶为无色至微黄色透明或半透明薄片或粉粒，密度约1．27，无臭,无味，在冷水中吸水膨胀至原来体积的5-10倍。溶于热水、甘油、醋酸，不溶于乙醇、乙醚等有机溶剂。在干燥条件下能长期贮存，但遇湿空气后便会受潮，易受细菌作用而霉变。
明胶可直接用以配制水溶性胶粘剂，对木材、纸张、织物、皮革等都有很强的粘接力。还可作为乳液聚合的分散剂。
