主料
虾肉六两，头发菜一钱，白肉一两，朥纱二两。
配料
（鱼帝）脯末二钱，笋一两，香菇三钱，味精、精盐各适量。鸭蛋一粒。
做法
将虾肉打成虾酱，加入鱼帝脯末、精盐、味精拌匀做成馅，将发菜用开水烫洗净沥去水分，另将朥纱披开，放入虾馅、白肉丝，把发菜放进中间，卷成条状，入蒸笼炊熟取出，用朥炸至变金黄。然后把炸好的虾卷和香菇、笋花下鼎共炆之，再把虾卷取起，切成圈状放进碗里，加上笋花、香菇再入鼎炆取起，用上汤加雪粉勾薄糊淋上面即成。
特点
色泽金黄，味香鲜嫩。
