保靖秤砣耙
秤砣耙是湖南保靖县各族人民爱吃的一种食品，用糯米和粘米磨成或舂成，讲究的也用品红品绿在顶上点上红点绿点，显得大方雅致。 制作方法： 1.用碾得熟透的上色糯米和粘米各半和匀，洗去糠屑，放在清水中泡透，再用软质的石磨细细地磨成米浆。 2.米浆装在簸箕中澄一会儿，然后用细布包帕覆盖其上，包帕上放上灶膛里干净的冷灰，吸出来米浆中多余的水分，即可支持包帕和灰、揉成面团，使之具有糯性。用石磨磨出的米浆做成的“秤砣耙”，吃起来细腻软和。用石碓舂成米粉做成的“秤砣耙”，吃起来粗而且有香味。同时，调整糯米和粘米的配料比例，还可改变“秤砣耙”的糯性和软和程度。 3.不论磨的还是舂的米团，经过充分揉搓，揉出糯性之后，就可做成秤砣模样，上甑开蒸。因为模样像秤砣，故名“秤砣耙”。 产品种类：“秤砣耙”有空心和包馅的。空心的不包任何馅子，只有下面做一空孔。讲究的“秤砣耙”都是包馅的。包馅的花样很多，有的包绿豆拌糖，有的把黄豆炒香磨成粉包心，有的用芝麻拌糖包心，还有用腊肉、香肠包心的。包心不同，口味也各异。清明前后，香蒿吐叶，这时若摘些嫩香蒿叶煮熟漂净，和着米粉一起舂碎，做出“蒿子耙”，吃了清心明目，别是一番滋味。 产品特点：刚刚蒸好开锅的“秤砣耙”，看去深润光亮，像乳白的琥珀、半透明的白玉。趁热吃，糯、软、甜、香，别具风味。
