补充资料：硬面饽饽
硬面饽饽是过去北京小吃中夜间供应的一种面食，也是常见品种。由于人们生活习惯改变、生活水平的提高，走街串巷卖小吃的减少，这种小吃也断了档。
硬面饽饽用发面，一般发到5成，兑上碱戗干面，要硬一点，揉均匀，把揉好的面搓成长条，揪成75克的小剂，包上20克红糖馅后按扁，要用花擀面杖交叉擀一下，擀出花纹后，用竹针在上面扎几个小透气孔，码入烤盘，入炉烤熟。要注意的是红糖馅的配制，比如用1.5公斤红糖，兑入干面300克、桂花100克、油50克，用手搓揉均匀。
硬面饽饽的特点筋道香甜，过去均在夜间，有走街串巷的手艺人出售，吆喝声在夜间传得很远。故《食品杂咏》中称：“饽饽沿街运巧腔，余音嘹亮透灯窗，居然硬面传清夜，惊破鸳鸯梦一双。”
