| 叶黄素 xanthophyll 一种萜。分子式C40H56O2。又称3，  二羟基a-胡萝卜素。存在于许多黄叶、花和蛋黄中。黄色棱柱状晶体。熔点196℃，比旋光度［a］Ca＋160°(氯仿)。溶于乙醇、乙醚、苯和石油醚。它的棕榈酸酯存在于Helenium autumnale L.和菊科植物内，还与玉米黄质同时存在于多种花内。在醇钠的作用下，叶黄素可异构化为玉米黄质。叶黄素的吸收光谱类似a-胡萝卜素（见类胡萝卜素）。叶黄素是工业制造胡萝卜素和叶绿素的副产品，其二棕榈酸酯用于改进视力。
