滚切，又叫滚料切。滚切和直切基本相同，只是落刀后原料要滚动一下。
滚刀的要求是：左手滚动原料的斜度适中，右手刀要紧跟着原料的滚动，掌握一定的斜度切下去。在切同一种块形时，刀的斜度要基本保持一致，以便使切下来的原料大小划一。
用这种刀法切片切块均可，主要根据原料的滚动速度来决定。一般滚动快，切的慢，切出来是大块；滚动慢切的快，切出来是斧头片。滚刀法一般适用于加工圆形或椭圆形的质地脆的原料，如胡萝卜、黄瓜、鲜笋等。
