| 麦芽糖 maltose 一种二糖。分子式C12H22O11。学名4-O-  -D-葡萄吡喃苷基-D-葡萄吡喃糖。由两分子吡喃型D-葡萄糖经1，4 位结合而成的糖。自然界中游离状态的麦芽糖不多见 ，主要存在于发芽的谷粒中，特别是麦芽。带一分子结晶水的麦芽糖为白色晶体或结晶形粉末。熔点102～103℃，相对密度1.54，比旋光度 ＋111.7° ＋130.4°(4克／100毫升) 。甜度约为蔗糖的1／3。易溶于水，微溶于乙醇，麦芽糖有一个半缩醛羟基，有还原性，能还原费林试剂，很易水解为两分子葡萄糖。麦芽糖是淀粉(或肝糖)被淀粉酶水解的主要产物。可用作甜味剂、营养剂和培养基，也可作糖尿病人的糖补充剂。
