【原料】
主料 雏母鸡1只(重约700～800克为好)。调料 植物油100克，玫瑰酒15克，大料少许，盐12克，味精6克，大葱1根，姜3片。
【制作过程】
(1) 将宰杀洗干净的雏母鸡用盐和味精擦抹外皮，再将酒灌入肚内以盐擦之。 (2) 将鸡放上大料、葱、姜后，用棉纸包好，(包红不宜太慢，以免影响传热)，放入沙锅中。 (3) 将粗盐炒至极热，倒入沙锅。四面填满中，将盖盖严，放于热的地方，经40分钟后把鸡取出来，解开棉纸,检查生熟程度. (4)用碗盛葱,姜丝,盐,味精等,用炒勺将植物油烧开,倒入葱,姜丝的碗内,跟盐鸡一同上桌.
