蒜汁面菜

面菜是民间的一种独特风味小吃,很有地方特色。即是面又是菜,是谁的发明和创造已无从考证,但留给人们的朴实独特的美味吃食,可是造福于民。

用料:面粉300克,菠菜(或其他青菜均可)。

做法:

①菠菜用开水氽一下,挤去水份,切成段。

②面粉加入鸡蛋一个,同菠菜一起和成稠面糊。

③先用蒸锅把稠面糊蒸成面菜饼。

④等熟后晾凉切成面菜片。

⑤炒锅上火,放入底油,葱姜、干辣椒炝锅,再放入面菜片煸炒,同时放入盐、味精,最后出勺时放入蒜汁。吃起来乡间趣味极浓,面菜淳朴,芳香筋道可口,增进对故乡的思念。

地地道道的民间菜肴。
