| 腌茶(yancha,leppet-so) 一种作茶食用的茶,又名菜茶。腌茶色黄绿匀润、略有清香、微酸,无苦涩味和其它异杂味。食用时切碎,加佐料辣椒油、生姜、盐、醋等调作凉拌菜。制作方法是在高燥处选红壤、黄红壤土质地方,挖直径60cm、深50-60cm左右的圆形土窖,窖底与窖壁拍筑紧实,围衬衬垫数层洗净凉干的新鲜芭蕉叶片,割取当年生肥嫩的春茶或夏茶嫩梢,一芽五、六叶,七八叶不论,长约30-40cm。放入沸水中烫煮(或用笼蒸)数分钟,去除苦涩味。捞起后置入清洁簸箕中晾去部分水分,将茶叶理顺后放入土窖,有时撒上少量食盐,上面再盖上芭蕉叶,以防止茶叶沾附泥土,再覆盖土层,略高出地平面,防止雨水等渗漏入窖。窖腌三个月左右,即可开窖食用。 |
