补充资料:得莫利炖活鱼

来历

得莫利炖活鱼是哈尔滨特色菜。哈尔滨郊区靠着马路边有一个叫得莫利的小村庄,村里人在路边上开了个小吃店招待路上歇脚吃饭的过路人。把豆腐、宽粉条子和乌苏里江里捞上来的鲤鱼炖在一起吃是老乡们吃个热乎的老做法。后来菜的做法不胫而走,传遍了城里的大街小巷。哈尔滨人说:要是外地朋友不喜欢吃西餐和东北大菜,咱们吃得莫利炖活鱼去。

做法

得莫利活鱼一般以普通鲤鱼做主料,也可选则“三道鳞”(还没见过用草鱼做的)。以前主要有四种做法豆腐,粉条,白菜,豆角丝。现在比较常见得是“粉条豆腐炖鱼”。其做法现在还没有完全公开,主要配料,大葱,豆腐,土豆粉。调料,酱油,白酒,花椒,大料,秘制苏子油,得莫利山泉水,用小火炖熟。
